On Plesk, in Tools & Settings -> SSL/TLS Certificates, we can select which SSL certificate Plesk should use for securing the panel.
Right now I have it selected to Lets Encrypt from server pool.
This will allow me to have a valid certificate if I access the panel via https://hostname:8443
But...
I would also like to know.
It looks horrible for the clients to see a broken certificate error as only accessing the plesk panels via the hostname has a valid certificate.
Redirecting is not a good solution as it only happens post-cert validation.

I to have a VPS with OVH as well and I have been facing the same issue than you have.
Where did you find the setting in the control panel to add a reverse DNS ip ?
Are you talking about the OVH Cloud panel or the Plesk...

Is the suggestion really to change the whole server hostname to mail.mydomain.ca ?
Wouldn't the hostname applies to more than just the mail server ?
Ok, so I went in Plesk under: Tools & Settings > DNS Templates, clicked the button SOA Records templates. I left everything as it is, only changed:
Expire from the default 7 days to 2 weeks.
