Hi, please help me, I accidentally changed my hostname to an unknown and now I can no longer access my plesk admin panel, I try logging to a ssh google cloud but I can't too, any way Is with gcloud but commands Plesk don't are not recognized on that terminal please don't want to lose all my sites and I'm already desperate ...

Even with no real hostname you should be able to reach it by IP address at:
http://123.123.123.123:8443

(substitute your server's IP address instead of the 123.123.123.123)

Do you know the ip address your plesk is installed on? In that case go to https://12.34.56.78:8443 where 12.34.56.78 is the ip address of where you plesk is installed.
