How can i use custome apache?

Hello , i am migrationg from cpanel to plesk (because of some problems )
and i have some questions :
1.how can i do a custome build on apache? i want to harden apache and .....
i want to install mod_security and ....
2.i want some php extensions like mbstring , soap and ....
how can that be done? will my configs be gone after plesk upgrade?
3.i want to use zend optimizer + ioncube loader , can i install them and get them working?

We've got rpms for a lot of that in the atomic yum repo. Off the top of my head, php-ioncube-loader, php-zend-optimizer, mod_security, PHP 5.2.x, mcrypt, a mount of pecl and pear packages, etc.
