How Do I: backup external MX record

I have a domain installed inside plesk. This domain has an MX record pointing to another mail server (another IP) that handles all email messages. (there is no accounts configured in plesk).

How do I keep a local backup of messages if the IP of the external mail server goes down? Is there a way to do this with plesk? Do I have to hack anything on mail enable standard ? (this is the actual email server of the box).

I need to keep this messages till the 'primary mailserver' is up again.

The only thing you can do it's add secondary MX record with less priority than external MX pointed to your local server. If external mail server will go down then all mail will be sent to second MX server pointed out within DNS.
