Under standard sendmail all that's needed is a line in /etc/aliases like:

email-addy: "| /etc/smrsh/script"

How's it done in Plesk/Qmail?

To redirect the output of a comman to a mail we have to do following.

For example:

ls |mail -s"Subject" emailaddress

This mail the ls output to the email address specified.

I am not asking how I can send a mail from a process, that's simple stuff.

I'm asking how to send a mail to a process. It's the other way around.
