Are we safe to upgrade the OS vendor PHP version to PHP7?
I understand that, I can keep running vhosts on older versions of PHP if required but the vendor OS version is not going to affect Plesk itself is it?This really depends on your unique content on your server. Please see http://php.net/manual/en/migration70.php / http://php.net/manual/en/migration70.incompatible.php and have an eye on backward incompatible changes.

I personally think, that you should wait, untill Plesk officially announce the PHP7 support, which might include as well some updates/patches for the different Plesk versions.
After I ran the command, I got this:
I have also php7 and successfully installed. Seems works perfect with WP and PiwikIn Update > Web Hosting > Different PHP interpreters versions I see just 5.*
