although everything is active on the plesk side and the smtp 25 door side, plesk does not send notification emails for password reset of registered users or any other automated emails from plesk

what could I do?

nonostante sia tutto attivo lato plesk e lato porta smtp 25, plesk non invia le mail di notifica per il reset password degli utenti registrati o qualsiasi altra mail automatizzata da plesk

You can either log in through SSH as the root user of your server and then check /var/log/maillog in Linux directly or you can install the "Mail Log Browser" extension from the extension catalog. Either way you need to be root or you need to be logged in a s "admin" in Plesk.

Solution:

Switch from a dynamically assigned IP address to a fixed IP address.

Verify that the PTR-RR is the default generic entry of your provider. Assign your email server its own full domain name (FQDN)."
 
Hello, thanks for the help

I could not get the plesk mail server to work, but using ionos smtp (the ionos webmail and mx parameters) the mails are sent and arrived successfully

I would like to understand, in case you decide to pass the mail to plesk (with roundcube or others) how to make everything work

Non sono riuscito a fare funzionare il server di posta del plesk, però utilizzando smtp di ionos (la webmail e i parametri mx di ionos) le mail partono e arrivano con successo

Vorrei capire, nel caso decidessi di passare la posta a plesk (con roundcube o altri) come poter fare funzionare il tutto

You'll need to ask Ionos so that they explain to you how to set the correct PTR record for your server. PTR (reverse resolution) is something that needs to be set on a router, not in your server. I am not sure whether you can do that in your Ionos interface, but they will know.
