Plesk 8.2 is expected to be released at the end of June.
 
problems with my server and debian 3.1 it doesn´t recognise the HD and even the network controler
 
i think you have 2 options

- wait to the release of plesk 8.2 and be a beta tester
- install the drivers to your kernel and use sarge with plesk 8.1.1
 
and how do i install anything if i can´t install debian 3.1?

Plesk 8.2 that is coming out this month is not a BETA, it's the real thing. However, if I was you, I would wait about a month to see what problems crop up. I've learned the hard way with Plesk it's often better to not be the 1st mover. People pick up problems quite quickly and Plesk is quite good at fixing them, but do you really want the pain of discovering the bugs yourself.

is there something special with the 1and1 server?

can't you change the source.list and do apt-get update and apt-get dist-upgrade ?

If you're upgrading, use apt-get to upgrade (as danliker said). My post explains further :)
If you're doing a fresh install, simply use the autoinstaller on the Plesk download page.
